Wait, white wine from the Finger Lakes Region? Yep AND the tasting room is Now Open! Hillock and Hobbs is the brainchild of Paul Hobbs, https://paulhobbswinery.com/ , also know as the Steve Jobs of the Wine World. Hobbs is not one to sit and stay, but rather scopes the world looking for new wine projects to discover. Sonoma, Napa, Mendoza, Spain, Armenia, and now he has returned to his childhood roots, the Finger Lakes. It tool Hobbs about five years to find this property and what a treasure it is with essentially virgin soils, steep slopes and thick slate soil. The rows of vines are planted perpendicular to the lake which allows for optimal airflow to keep the grapes dry. Not sure I would want to be the one picking these grapes!

Taste It.

The Hillock and Hobbs Dry Riesling https://www.hillickandhobbs.com/ is fermented as dry as possible and it really is dry. With a very tiny production, the grapes have great focus and precision with a wonderful mineral quality. Fragrant aromas of gardenias with lovely hints of pear and citrus.

Pair It.

The cleanness of this white wine allows for easy pairing. Savor it with a light summer salads, sushi or even sautéed soft shell crabs.
